Veggie Nachos w/ Sweet Potatoes, Pinto Beans, Caramelized Onions - Vegetarian, Gluten Free Recipe

INGREDIENTS
1 large sweet onion, sliced thinly
2 TBS avocado oil (or oil of choice)
½ large sweet potato, cubed
1 can pinto beans, 15.5 oz, rinsed and drained
1 tsp monk sugar ( can replace with sugar, or other sugar alternative)
2 tsp smoked paprika
½ jalapeño pepper, sliced thinly
2 cups shredded cheese (cheddar, mozzarella, or a cheese you love)
1 bag of tortilla chips
½ avocado, for garnish, optional
1 TBS sour cream, for garnish, optional
drizzle of honey
salt, to taste
INSTRUCTIONS:
Mixture
In a non-stick pan, on medium-high heat, add 1 TBS oil, monk sugar, and thinly sliced onion. Sauté for approximately 12 minutes. Turn to low-medium heat and sauté for another 5- 8 minutes until the onions are caramelized. Remove pan from heat and place onions in a bowl, set aside for later.
Add remaining 1 TBS of oil to non-stick pan, on medium-high heat. Add cubed sweet potato pieces and salt to taste. Coved pan with lid and sauté for 5 minutes.
After 5 minutes, add smoked paprika, pinto beans and a drizzle of honey. Stir and cover with lid. Turn heat down to low and cook for approximately 5 -7 minutes until the sweet potatoes are cooked through.
Remove from the heat. Add the caramelized onions to the mixture in the pan and mix well.
Nacho Assembly
Place aluminum foil or parchment paper on a baking dish
Add a layer of tortilla chips on top. Sprinkle with veggie bean mixture and then cheese. And top with jalapeños.
You can add an additional layer of chips, veggie bean mixture, cheese, and jalapeños if you wish.
Place the dish of nachos in the oven on broil. Broil for 3 - 5 minutes (note that the cooking time may vary depending on your oven). DO NOT walk away from the oven as this may happen quicker depending on your oven, and you don't want to burn the nachos.
Remove from the oven once the cheese has melted.
Garnish with salsa, avocado and/or sour cream, optional.
I love nachos of all types. This is a great one if you want a hardier meal packed with flavor. The ooey gooey cheese and the crunch of the tortilla chips make me smile. :)
